This is a new look at Pinot Noir through a white wine lens. Central Otago Pinot Noir grapes were hand-picked and quickly pressed then fermented as white juice. The result is a fresh and energetic white wine perfect for summer and something a little different. The nose displays red apple, honeysuckle, and strawberry. The palate is sweetly fruited, fresh and lively, with notes of red apple, melon and a touch of spice. Best to serve chilled.

Rabbit Ranch Pinot Gris, being a mutation of Pinot Noir, revels in the Central Otago conditions that suit Pinot Noir so beautifully - a long slow ripening period is desirable, with cool nights and warm days as the Autumn harvest approaches. The Rabbit Ranch Pinot Gris has a mineral acidity backbone and an off dry finish that gives the wine a delicious structure and refreshing style.

Land that was once a high country sheep station is now a flourishing vineyard. Sheep and rabbits co-existed on the land for quite some time but the sheep couldn't keep up with the nocturnal activity of the rabbits, and in the end were driven off the land. Rabbits now run free on the vineyard and fuelled by high altitude Pinot Noir, some are reputed to be the size of ponies, but that's another story... The Rabbit Ranch Pinot Noir is made in a very soft, fruit forward, low tannin style - a wine to be savoured and supped, rather than an assault on the senses.

The Rabbit Ranch Sauvignon Blanc is a blend of Sauvignon Blanc from their vineyards in the South Island of New Zealand and the Central Otago Rabbit Ranch home block. A cool climate, elegant yet assertive style Sauvignon Blanc, left on the lees for approx 3 months to tone down some of the overt grassy, grapefruit notes and giving a lovely textural boost to the wine.

The grapes are partially dried under the Spanish sun to concentrate their sugars, then gently pressed and fortified to 15% before completing fermentation. Deep mahogany in colour, this PX offers a rich and seductive nose with intense aromas of sun-dried grapes, figs, dates, and molasses, backed by hints of leather, tobacco, and toasted nuts. The palate is unctuously sweet yet remarkably balanced, with over 290 g/L of natural sugar, offering a velvety mouthfeel and a long, lingering finish that avoids cloying heaviness. An indulgent match for blue cheese, dark chocolate, spiced desserts, or poured over vanilla ice cream.

Golden straw in colour, this Bourbon barrel-aged Chardonnay has aromas of ripe, grilled peach, with hints of toasted marshmallow, vanilla bean custard, and baked spice pear. Rich, creamy, and concentrated flavours of grilled peach, lemon pie crust, graham cracker, vanilla bean, baking spices, and toasted oak lead to a balanced acidity and lingering finish. Aged a minimum of two months in American Oak Bourbon Barrels.
