At once his mind filled with spiralling mocha flavours that he could not forget. It would take him years to bring this unprecedented whisky to life. But in its tiramisu tones and melting chocolate, you can taste his most delicious imaginings. Signet begins with Glenmorangie's precious chocolate malt spirit, made just once a year in their giraffe-high stills. Its espresso-like intensity fills the Distillery with aromas more familiar in an Italian coffee bar. Over the years, they temper its power with rare and treasured casks. Bourbon for creaminess. Sherry for sweetness. The spice of virgin charred oak. All balanced by some of the oldest whisky they own. The result? A velvet explosion of flavour. Highland Park 12YO reflects the unique culture of their remote island home on Orkney. Part of Scotland, yes, but originally belonging to a vast Viking kingdom. At Highland Park, they honour the spirit of their Viking ancestors, sharing their pride, integrity and fierce independence. Predominantly aged in Sherry seasoned European and American oak casks, Highland Park 12YO boasts warm wintery spices that are engulfed in waves of smoky honey, fruitcake and heather.

This is a wonderfully rich and complex single malt. Opening with rich and spicy aromas of crème brulee, heather honey and crumbled cinnamon, intensely fruity notes follow - fresh pineapple dressed with a scattering of sun-kissed lemon zest. Created using a higher proportion of local peated malt and matured in a combination of sherry seasoned European and American oak casks and ex-bourbon casks. Valknut walks a fine line between the aromatic spiciness of cloves and cracked black pepper, and the patisserie sweetness of toasted vanilla and creme brûlée, hence the term, Custard Bonfire.
